Trebor: actually a mixed language not only borrows boatloads of vocabulary, but also borrows boatloads of morphology. Pidgins and creoles tend not to borrow morphology from any of their source languages.

Grammatical categories are a somewhat artificial concept; we don't "know" right from the beginning that there are such things as "nouns" and "verbs", we know these things because we learnt them from linguists. Besides the aforementioned forms of vowel harmony, there are also some which are harder to specify, such as the advanced/non-advanced tongue root harmony of written Manchu.
