Well actually my source was a bilingual french/english webpage on cervidae, where it was said than mooses and elks are actually the same animal (Alces alces), the same goes for White-tailed Deers and Cariacous (Odocoileus virginianus), Reindeers and Caribous (Rangifer tarandus), Common deers and red deers (Cervus elaphus).
I think there are some dialects which use "elk" for "moose", as I've often seen the two confused. However, the scientific name for a proper elk is Cervus elaphus, so it's the same as the Wapiti (= "white rump" in the Shawnee language). A moose is indeed, as you said, Alces alces. I don't know if "elk" is a genuinely approved name for Alces alces, or if it's a similar confusion to American English "monkey" for "ape", but I suspect the latter.

Just a tip for your English: your word-order was slightly confusing, though I worked out what you must mean. "French people call the roe deer "chevreuil" while Quebecers call the white-tailed deer "chevreuil"".
