I think. I'm a bit confused about what's going on between the first and second syllables. Might include [j] or not, not sure.

(again, not sure if that last one warrants a [j])

Those two are entirely straightforward for me:

saucepan: /ˈsɒsˌpɛn/ > [ˈsɒs̻ˌpʰɛ̃(ː)n]
frying pan: /ˈfrae̯əŋˌpɛn/ > [ˈfɰˤae̯ɨ̃ŋˌpʰɛ̃(ː)n]

Almost. They're stressed differently: I stress valet on the second syllable. EDIT: Wow, that was a major failure. I have [væə̯.ˈleɪ̯] or [væə̯l̴.ˈeɪ̯] for valet. The final vowels are different for me, as is the stress.

Ok, a guy on TV just said /"mi.TeIn/ for Methane. Who says this? What accents?

All the ones I checked (the OED, Merriam-Webster's, the Cambridge Advanced Learner's Dictionary & Thesaurus, Dictionary.com's, Collins Complete & Unabridged, and the American Heritage) gave a pronunciation with the first syllable stressed only, with no other variant. I have no idea what obscure English dictionaries you could have possibly consulted.

The green phonemes are standardized ones, whereas the red phonemes try to represent my actual underlying forms as close as possible.

If I was trying to truly be standardized I should have used /aɪ̯/ for both my /ae̯/ and /əe̯/, but since Canadian Raising of /aɪ̯/ is sufficiently widespread I figured people would know what I meant by /əɪ̯/.
