Is [ɹ] considered an acceptable realization of Irish r now? I've been listening to people speaking Irish on YouTube and everybody agrees it sounds exactly like Simlish.

Yes. Even Gaeltacht speakers use it in some areas (e.g. West Cork).

When you use -po- you still need to use a tense marker. The basic mnemonic for the structure of a verb is STROVE

• Subject: ni-
  Tense: -na-
  Relative: -po-
  Object: absent here
  Verb Root/Stem -um(-w)
  Extention/Ending: (-w)-a

Because -po- is simply the class 16 locative relative (where/when), it comes after the tense. When a relative prefix is used after the future tense -ta-, it becomes -taka-.

• nilipokupenda = when I loved you
  (ni)napokupenda = when I love you

*1) I overlooked the bein. But beim Brunchen is correct - brunchen is a verb and as such can be turned into a verbal noun like this. You'll also find that in actual usage.
