Yeah, for this sort of thing I'd say it makes sense to use things closer to the actual phonetic realization, instead of abstractions convenient for typesetting.

true. i'm used to phonemic representations that draw comparisons between the dialects and emphasise that it's the same vowel phonemically. For that matter I have heard very, very few speakers of any accent of English that have a proper back vowel there, although other accents are likely to have an opposition between something like [ʉ:] and something like [ʊ], which most scottish accents don't....
