Do it... if you really want to live in russia, then perhaps it'd be better if you could find a new job, but like, you're pretty smart - i think you'll learn it quickly. Also I think becoming functionally illiterate as an adult is actually a useful experience.
(Also, have you only been there for a month? Are you sure it's not just teething troubles? You might have just had to buy a lot of shit in the first month that you won't have to again)

Ich habe endlich mal Glück gehat. Einer der viele Unterkunfte der ich geschrieben hatte und ausgebucht waren, haben mich zurück geschrieben, dass sie eine Abbestellung gehat haben, und deshalb könnte ich doch buchen. So wir gehen doch nächstes Jahr auf Winterurlaub!
I was finally lucky for a change. One of the many accomodations I wrote and were soled out wrote me back that they had a cancellation, and therefore I could book after all. So next year we're going on winter holiday anyway.

Aside from the general idea of hardship providing an opportunity for personal growth and to understand the situation of others, I don't know what you mean specifically. Can you explain a bit?

3. Könnte means "would be able to" (hypothetically), whereas konnte means "was able to" (factually, in the past)
4. Auf Urlaub gehen is apparently old fashioned and still used in Austria and, I'd assume other southern areas ... so, maybe appropriate considering your destination, but I've never heard it: generally in (den) Urlaub gehen/fahren
5. Not needed in US English, but I find that so bizarre that Americans can indicate the recipient of writing with a direct object. When I was a kid, my uncle, who has spent most of his life in America, visited us and we went to a historical village thing and when my brothers and I went on this little minature railway thing, my uncle jokingly said goodbye to us as the train-etje was leaving and he said "Write me!" and I honestly had no idea what he meant!
6. The relativised element in these two clauses has a different role - in the first one, it's either the object of "write" (in the US) or the object of the preposition "to", in which case it's very common to simply omit the relative pronoun. In the second clause, the relative pronoun is the subject of to be sold out and this cannot be omitted, and I think generally, even if you had included it for the first clause, you'd still need it again just because they're fulfilling different roles: "which I wrote to and were sold out" sounds a bit awkward to me and I'd do it with two clauses: which I wrote to which were sold out. I'm not sure what prescriptive standards would advise, but I suspect there may be big differences in people's internal grammars regarding this point. Also, I think in US English, the prescriptive standard prohibits "which" in restrictive relative clauses, so then it'd be "that". In any case, the differing roles of the relativised element is also what made your German sentence incorrect and why I changed your "und" to ", die".
7. I'd prefer "wrote back to me" but I think that's just a dialect thing. More idiomatic and informal would probably "got back to me and said" - that's at least what I'd say.
8. In this case was able to is more idiomatic. If you're talking about a simple, one-off occurance in the past where the situation permitted something was/were able to tends to be used instead of could, which is more for talking about general abilities. For example: when I was 10 I could play the violin quite well, but one day I accidentally dropped my violin in the river. I was able to get it out again, but it was so damaged by the water I could never play it again.
9. The phrase to go on holiday can be without an article, but I think if you describe what kind of holiday, then you should use an article.

It's not teething trouble. I ran the numbers: it wasn't possible to pay for September's rent, October's rent, and for the work visa (just the fees, in Tallinn) without dipping into savings or borrowing against a future paycheck. (And my company arranged my apartment!)

Currently the only real problem is organizing the visa. It's possible to get a Chinese visa in Russia, but it is a bit complicated.

Xian seems nice. I have a friend who went there. I think she liked it. Xiamen (Amoy?) is also famous though, yeah. But if you can, please try to find somewhere with little pollution. It's really quite bad there.

I don't think so. Well--it might be possible, yes--but this would probably be in Magnitogorsk or Magadan or somewhere I really don't want to live. I considered Kazakhstan, but job offers weren't as forthcoming as I'd hoped.
Вверху (?) нашей описи (я буду учить с университетским другом) стоит Шиамен. Крутой город, говорят–тёплый, чистый, интересный. Также рассматрываем Ченгду, Гангжоу, Шензен, Хиан, Нанджинг, Вуган. Гарбин интересует меня, а по-мнению моего друга там слишком холодно...
At the top of our list (I'll be teaching with a friend from college) is Xiamen. Nice town, they say--warm, clean, interesting. We're also looking at Chengdu, Hangzhou, Shenzhen, Xi'an, Nanjing, Wuhan. I'm interested in Harbin, but my friend thinks it's too cold.
Xian seems nice. I have a friend who went there. I think she liked it. Xiamen (Amoy?) is also famous though, yeah. But if you can, please try to find somewhere with little pollution. It's really quite bad there.
Ne. Harubin wa sora ga sumoggu de kurokunai? Machi machigatte ru?
That's right. Wasn't Harbin's sky black from smog? Or am I mistaken about which city it was?

As for the above, "betaalde arbeid" is a thing, but pretty formal and typical of civil servant writing.
