I think the most interesting thing I did spelling-wise was Raum/Fluvic, which ripped-off borrowed heavily from Egyptian hierogylphics and had a cheerfully irregular mix of phonetic, fossilised, falsely- archaised and logographic forms which were all valid.

The spellings of Old Albic (both the native script and the romanization I use) are regular and phonemic. The spelling of Roman Germanech is also quite regular, with some concessions to etymology: c is /ʃ/ before front vowels and /k/ otherwise; /s/ is spelled s where it is from Latin /s/ and z where it is from Latin /t/; etc.

The spelling in some of my conlangs is too regular. Some of my other conlangs are impossible to read.
Nomiledos: alpo älpo̞
Theik: íśoílí izoili
Flitiane: botzeitetihvo botztətɪvo
Modern Ikotan: idinel idinel
Chingminsei: peingwo pŋwo
Lancpaek: färanae fäɹæn
Talrinian: sebete sebete
Nadarian: xespun ðespən
Mitsoxun: xukit ʃəkɪt

Hellesan has a medium degree of grapheme-phoneme correspondence, and is slightly defective. Its rules on pronunciation are quite consistent and predictable with a high degree of accuracy.
The main pronounciation differences among dialects are, basically, on affricates and some palatals, but above all, vowels.

darni ['daɾni] / ['daɾnɪ]
tocard [tu'kaɾ] / [to'kaɾ] / [to'kaɾt]
aur [awɾ] / [ɔɾ]
cenaure [sə'nawɾə] / [se'nawɾe] / [se'nawɾɔ]
pramar [pɾə'ma] / [pɾa'ma] / [pɾa'maɾ]
lhudh [ʎutɕ] / [ɫudʲ]
